IntroductionJersualem artichoke (helianthus tuberosis l.) Is a tuberous rooted perennial. Native americans grew it for centuries as a staple food. Garuda's jerusalem artichoke flour (jaf) is a concentrated source of fructooligosaccharides, useful prebiotics that promote the growth of beneficial bacteria in the human digestive tract.
BenefitsFructooligosaccharides (FOS) are naturally occurring simple carbohydrates found in Jerusalem artichoke. FOS are neither digested nor absorbed by humans; instead, they encourage the growth of bifidobacteria--one of several beneficial strains of colonic bacteria--and discourage the growth of most undesirable bacteria in the colon. Regular intake of Jerusalem artichoke, a food rich in FOS, may help reduce the risk of chronic disease and promote a healthy intestinal system. Other studies suggest that FOS may also help with the absorption of calcium in the body. The inulin present is valuable also as a source of fructose for diabetics. Jerusalem artichokes are classified in the division magnoliophyta, class magnoliopsida, order asterales, family asteraceae.
